Arroz con Pollo
- Ingredients:
- 2 teaspoons Salt
- 1 teaspoon Garlic Powder
- 1/2 teaspoon Dried Cumin
- 1/4 teaspoon Black Pepper
- 1/4 teaspoon Cayenne Pepper
- 3 or 4 lbs. Chicken Legs or Thighs
- 2 cups Rice
- 2 cups Pinto Beans
- 1 Onion (Diced)
- 1 Green Pepper (Diced)
- 1 Red Pepper (Diced)
- 2 tablespoons Cooking Oil
- 1 bunch Cilantro (Diced)
- 4 Cups Salsa
- Recipe
- Mix together salt, garlic powder, dried cumin, black pepper, and cayenne pepper together. Season chicken with mixture, making sure it is evenly seasoned.
- Heat oil in skillet on high. When ready, add chicken and cook 6 minutes on each side or more until brown. Remove chicken from pan.
- Place Onions, Green Peppers, and Red Peppers into pan and cook until soft for about 7 minutes. Mix with cooked rice and beans.
- Garnish with cilantro and serve with salsa.
