Arroz Con Pollo

Arroz con Pollo

  • Ingredients:
    • 2 teaspoons Salt
    • 1 teaspoon Garlic Powder
    • 1/2 teaspoon Dried Cumin
    • 1/4 teaspoon Black Pepper
    • 1/4 teaspoon Cayenne Pepper
    • 3 or 4 lbs. Chicken Legs or Thighs
    • 2 cups Rice
    • 2 cups Pinto Beans
    • 1 Onion (Diced)
    • 1 Green Pepper (Diced)
    • 1 Red Pepper (Diced)
    • 2 tablespoons Cooking Oil
    • 1 bunch Cilantro (Diced)
    • 4 Cups Salsa
  • Recipe
    • Mix together salt, garlic powder, dried cumin, black pepper, and cayenne pepper together. Season chicken with mixture, making sure it is evenly seasoned.
    • Heat oil in skillet on high. When ready, add chicken and cook 6 minutes on each side or more until brown. Remove chicken from pan.
    • Place Onions, Green Peppers, and Red Peppers into pan and cook until soft for about 7 minutes. Mix with cooked rice and beans.
    • Garnish with cilantro and serve with salsa.
